I had a lovely dinner with my college friends at one of the newly-opened Filipino restaurants at The Fort: Sarsa Kitchen + Bar by celebrity chef JP Anglo.
I was told beforehand that I should call for reservations because this place can get really jam-packed during lunch and dinner.
True enough, there was a queue outside the restaurant. However, the server was kind enough to get our orders as we wait for our table. We only waited around 15 to 20 minutes for our table.
For the appetizer, we munched on the free cornick and the Crispy Dilis (Php 120), with chili pineapple glaze.

The spiciness was bearable and the flavors made better by the pineapple. Loved it!
Our main dishes include Tortang Talong with Crispy Sardines & Kesong Puti (Php 165) and Inasal Sisig (Php 335).

I'm not much of a fan of tortang talong, but I loved how creative and delicious this version of tortang along is. A lovely surprise is the Inasal Sisig, a pleasant combination of Chicken Inasal and Sisig. I'll take this sisig anytime.
The hardcore dishes we had are the Sizzling Kansi (Php 380) and the Twice-Cooked Pork Belly (Php 270).

The Sizzling Kansi (or the Ilonggo version of Bulalo) is topped with batwan gravy. Batwan is a fruit that can be found in the Negros Islands and is used as a souring agent. However, the gravy wasn't really sour and the kansi was very tender!
The best dish we had that evening was the Twice-Cooked Pork with Ginamos Gata. I loved the Ginamos Gata so much that I started putting it on top of rice. The ginamos gata complements the pork perfectly. More rice, please!
We skipped the dessert and decided to move somewhere else to grab some coffee and desserts.
Sarsa Kitchen + Bar is an ultimately satisfying experience. The dishes are delicious and very affordable, a lot more affordable than I expected, actually. It is no wonder that people line up for this restaurant. I wouldn't mind queuing again just to eat here. :)

DeleteI like the interiors, reminds me of a classroom for some reason. Ever since I've tasted kansi in Boracay I'd been wanting to eat it again. So if ever I go to Sarsa I will order their kansi.
