After having drinks at the Long Bar, we proceeded to Spectrum for the dinner buffet.
Spectrum is a spacious and elegant all-day dining restaurant offering dishes from China, Middle East, India, Europe, and the Philippines. The table reserved for us was near the dessert area (which is to my advantage.hehe)
What separates Spectrum from other hotel buffets is the interactive dining concept, wherein guests can freely interact with the chefs.

We asked for a sampler dish of everything in the carving station, and it was served at our table. And of course, I had the Roasted Beef.
Tandoori Station
I wasn't able to get my own tandoori dish, but I got to try Sanju's lamb tandoori, which was really flavorful and tender.
Pizza Station
While we were taking photos, Richie was already giving this station a serious look.
You can order a personal pizza, like the ones we had. We had two different toppings for the pizza.
Cooked Dishes and Pasta Stations
I didn't really get cooked dishes because I don't want to stuff myself for the desserts. hehe. :)
I asked the pasta chef to create a pasta sampler (with different types of pasta and sauces) for me, and he came up with this:

I also got a dim sum sampler, which I finished alone. hahaha!

I wouldn't miss on my favorite buffet item, sushi!

The sushi chefs are quite friendly in giving suggestions on the types of sushi that I should try. Aside from my usual California Maki, I liked the ones filled with the lechon.
Tempura Station
Instead of serving ready-made tempura, the chefs will cook tempura per request. :)
I was a little sad that they didn't use king prawns for my tempura.

The highlight of the Spectrum buffet is the Honey Station, and they have live honeybees! My fellow foodies particularly loved the Mascarpone topped with Pistachio and the Honeycomb on Chocolate Cup.
Dessert Station
And last but not least: THE DESSERTS!!!
The dessert station was pretty extensive. Aside from the cakes and pastries, it also includes the Mango Station, Halo-halo and Ice Cream Station, and the Crepe Station.

I shared some cakes with Yedy but I also got myself crepe, personally prepared by Executive Pastry Chef Didier Derouet.

I had banana crepe with chocolate syrup, topped with flambeed marshmallows and English Toffee Ice Cream (as suggested by Chef Miko Aspiras, after seeing the confusion on my face. Choosing one ice cream flavor is a tough job, you know).

I also enjoyed Mango-Cue, which was really sweet. I suppose they're using Guimaras mangoes for the Mango Station.
Chef Miko Aspiras also made us try his creation: White Chocolate-Covered Olives.

The taste of the olive surprisingly went well with the chocolate. :)
Spectrum is one of the best hotel buffets I have tried. The delicious food and impressive service were really worth its price. Spectrum has a dessert buffet option, which makes me a really happy kid. I see myself going back soon.
Overall, it was an awesome dinner with my fellow food bloggers. I was actually too shy to even approach some of them (too starstruck, I swear!). I'm looking forward to seeing all of them again soon.

I'd probably avoid the pizza and the pasta though .. what do you do to prepare for these buffets?
I'm always lugi when it comes to buffet. The last breakfast buffet I tried, I lost my appetite right after eating a small pancake. :(
I eat small meals throughout the day. And it would be better if you won't eat something filling like pancakes, it's starch. Nakakabusog talaga agad yun. :)
