The Beefy Goodness of Hillside Ranch

A few days ago, I was invited by Spanky to try this Kapampangan brand called Hillside Ranch at the old favorite restaurant Trellis in Makati. If you aren't familiar with Trellis, I bet your dad is. :)

Opened in 1980, Trellis is known for its legendary Sisig and other Kapampangan specialties (since Father's Day is a few days away, why not bring your dad here? I'm sure he'll love it.)

Hillside Ranch was started by Atoy and Chay Tayag, who both came from culinary clans of Pampanga. Atoy is the nephew of Claude Tayag (of Bale Dutung) while Chay's mother owns Binulo Restaurant in Clark. Atoy's family also owns Mother Earth, a meat processing business also based in Pampanga.

They currently have two products: The Slow Roasted Beef Belly and Corned Beef Brisket. Hillside Ranch products are microwaveable, so you can enjoy some beefy goodness without the hassle.

The aroma of beef belly cooking in a hot pan welcomed me as soon as I arrived if it was waiting for me to grab it.


We were first served the sandwiches: French Dip and The Reuben.




The French Dip has Hillside Ranch Beef Belly and caramelized onions on a crusty baguette, served with au jus while The Reuben has Hillside Ranch Corned Beef Brisket and sauerkraut on dark rye bread, served with horseradish cream dip. This is one of those moments that I can't play favorites. You can find both sandwiches, priced at Php 200, at their stall at Salcedo Market every Saturday.

While devouring those delicious sandwiches and grabbing spoonfuls of sisig, I was distracted by the sight of this...

Slabs of Hillside Ranch Slow Roasted Beef Belly and Corned Beef Brisket right before our eyes. I stare at it like the way I look at a topless photo of Adam Levine. Dreamy, drooling, simply tantalized.

Beef Heaven!!!

The Roasted Beef Belly was served with a special sauce, rice, and polenta. Polenta is ground cornmeal usually made into a porridge (I had no idea about polenta prior to this dinner so I had to google this to find out. haha). The Corned Beef Brisket was served with veggies.

I love how tender and flavorful the Roasted Beef Belly is, and can do even without the sauce. The Corned Beef Brisket doesn't have the overwhelming salty taste, which I really like. Surprisingly, both portions of meat didn't leave much grease on my plate.

  6. Ooh I do remember Hillside Ranch. They joined the Rockwell's Ultimate Taste Test last year and I was able to try their beef belly. So they offer HR in Trellis, good to know.
